Shrimp Chowder

2 cups potatoes — diced
3/4 cup onion — chopped
1/4 cup celery — finely chopped
1 1/2 cups water
1 teaspoon salt
pepper — to taste
2 cups evaporated skim milk
8 ounces shrimp — uncooked
1 tablespoon parsley
Bring potatoes, onion, celery, water, salt and pepper to a boil in a large
saucepan. Reduce heat, cover and simmer about 10 minutes or until the
potatoes are tender. Add milk and shrimp and simmer a few minutes longer,
or until the shrimp turn pink. Sprinkle with parsley.
