Stir-fry Garlic Shrimp

2 large cloves garlic, finely chopped
2 tsp. vegetable oil
1 lb. frozen, peeled and deveined raw medium shrimp, thawed
3 c. sliced mushrooms (about 8 oz.)
1 c. 1 inch pieces green onion
1/4 c. dry white wine or apple juice
2 c. hot cooked rice
Cook garlic in oil in 10 inch nonstick skillet over medium-high heat 1 minute, stirring frequently. Add shrimp; stir-fry 1 minute. Add mushrooms, onion, and wine; cook about 2 minutes or until shrimp are pink and vegetables are hot. Serve over rice.
